 3 oz Sprite or 7Up  
1 Cucumber slice  
1 Strawberry, hulled and cut into quarters   
Half an orange slice   
Half a lemon sli
6 Mint leaves

Glass: Highball




Preparation

Add all the ingredients to a highball glass filled with ice and stir to combine. To mix things up a bit, you can replace the Sprite or 7Up with ginger ale, Champagne or ginger beer.

This is the official drink of the Wimbledon Tennis Tournament--perfect for Spring!

Easter Bunnies!


1 1/2 oz dark crème de cacao
1/2 oz vodka
1 tsp chocolate syrup
1 tsp cherry brandy
Preparation:


Pour the crème de cacao and vodka into a cocktail shaker with ice.
Shake well.
Strain into an old-fashioned glass with ice cubes.
Float chocolate syrup and cherry brandy on top.

IRISH RECIPES PT II


Irish Potato Bacon Soup

Ingredients

1 (1 pound) package bacon
1 onion, chopped
1 cup celery, chopped
6 potatoes, scrubbed and cubed
salt and pepper to taste
2 (12 fluid ounce) cans evaporated milk


Directions


Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate, crumble, and set aside.
Cook and stir onion and celery in the remaining bacon grease over medium heat until the onion is translucent and tender. Drain excess grease, then stir in potatoes. Add water to cover all but 1 inch of the potatoes. Bring to a boil over medium-high heat, then reduce to medium-low, and simmer until potatoes are tender, about 15 minutes, stirring often. Stir in the evaporated milk, and continue cooking until warmed through. Season with salt and pepper. Stir in bacon just before serving.

Ham Steak w/mashed and Irish Whiskey sauce


2.5 lb ham steak
About 30 cloves
150 g light brown sugar
1 orange, juice only
flat-leaf parsley, to garnish
For the Irish whiskey sauce

225 g granulated sugar
75 ml cold water
225 ml hot water
3-4 tbsp Irish whiskey
For the pea and spring onion champ

1 kg potatoes, scrubbed
50 g butter
200 ml milk, (or if you want it really rich, use ¾ milk to ¼ cream)
300 g shelled peas
50 g spring onions, chopped
3 tbsp chopped flat-leaf parsley


Method

1. For the Irish whiskey sauce: put the sugar and cold water in a heavy-based saucepan and slowly bring to the boil, stirring to dissolve the sugar. Boil until the sugar caramelises, it should be a deep golden colour. Swirl the pan to keep the colour even but do not stir it or it will crystallise. Once it has caramelised add the hot water carefully (it may spit), then boil again for a few minutes to mix with the caramel. Leave to cool for a minute or so before adding the whiskey.

2. Put the ham steak in a saucepan of cold water, bring to the boil, then pour off the water, fill up with fresh cold water and boil again. If there seems to be salt floating on the surface repeat again, but if there is not, then continue to boil for about 1 ½ hours or until the ham steak is cooked and tender when pierced in the thickest part with a skewer.

3. For the pea and spring onion champ: bring a large pan of salted water to the boil, then cook the potatoes for 5-10 minutes until just tender, drain ¾ of the water and continue to cook on a low heat until fully cooked. Avoid stabbing the potatoes with a knife - floury potatoes will break up if you do. Once they are cooked, drain off all the water and leave until just cool enough to handle.

4. Preheat the oven to 450 degrees.

5. Remove the ham steak from the water and peel off the rind, leaving the fat attached. Score the fat into diamonds, and stud each diamond with a clove. Mix the brown sugar and just enough orange juice to make a paste and spread this paste over the fat. Put the ham steak in an ovenproof dish and cook in the oven for 15 -20 minutes or until the fat is deep golden and glazed, basting after 10 minutes.

6. Meanwhile, peel the potatoes while they are still hot and mash with most of the butter. Place the milk in a saucepan with the peas and spring onion and boil for 4-5 minutes or until the peas are tender. Add the parsley and take off the heat, then beat into the potatoes, keeping some of the milk back in case you do not need it all. Season to taste and beat until creamy and smooth.

7. Leave the ham steak to rest while you reheat the sauce and the champ. If necessary, add the remaining milk to the champ and beat well to mix.

8. To serve: carve the ham steak into thick slices and place on 4 warm plates. Spoon over the sauce and serve with the champ that has the remaining butter melting in the centre.Drain the bacon slices on a paper towel-lined plate, crumble, and set aside.

IRISH Whiskey!

This drink is called a Ballylickey Bait.  It's an easy, quick one.

2 oz Irish whiskey
honey
soda water

In an old-fashioned glass, muddle the honey and a little water until it dissolves. Add ice cubes and whiskey and fill with sparkling water. Stir gently and garnish with a lemon peel.

Irish Steak w/Irish Whiskey and More! (Food Recipe)

Check this out, this is a great link to a tradtional Irish steak with Irish Whiskey marinade.

Also, here is a great recipe for Irish roast rabbit.  In Ireland, wild rabbits were plentiful AND also raised domestically.  They were a main source of food for a long time--sometimes the only meat people got.

First,  joint your rabbit.   There's a good video on that here:

Joint and prepare your rabbit for cooking

Then  marinade it as follows:

2 tablespoons olive oil
1 large glug of red wine
1 large glug of red wine vinegar (or a smaller glug of balsamic)
2 chopped shallots or 3 cloves of crushed garlic
a few squashed juniper berries (brings out the gaminess)
herbs such as bay leaves, a sprig of thyme or rosemary
some salt and roughly ground black pepper
Marinate the joints in a covered dish in the fridge for at least four hours (or preferably overnight), turning them a couple of times. Then take them out and pat them dry with some kitchen towel.

Wrap the marinated rabbit in bacon and roast the joints on a high setting.

More Beer Cocktails

CAFFEINE BOMB:

Ingredients:

1 bottle Newcastle Brown Ale
1 shot espresso
1 shot Jack Daniel’s
1 small can of Red Bull

Pour espresso, Jack Daniel’s and Red Bull into a martini mixer, pour in beer, stir and pour cocktail over ice in a tall glass.

TOM BASS:
Ingredients:

12 oz Bass beer
1 shot Jagermeister

An upscale alternative to the Jager bomb, the Tom Bass is a simple mixture of Bass and a shot of Jagermeister in a pint glass. Stir lightly, drink!

VALENTINES DAY DRINKS PT IV: DINNER FOR TWO

Agave Kiss:

Ingredients:

2 oz Herradura Tequila Silver
1 oz white creme de cacao
1 oz double cream
1/2 oz Chambord
white chocolate flakes for rimming
fresh raspberries for garnish

Preparation:

1.In a cocktail shaker with ice, add Herradura tequila, white crème de cacao, double cream and Chambord.
2.Shake for 15 seconds.
3.Pour into a chilled cocktail glass, rimmed with white chocolate, add a spear of fresh raspberries, and serve.

CHOCOLATE AND VALENTINES DAY DRINKS PART I


Godiva Chocolate Martini

1 1/2 shots chocolate liqueur (such as Godiva)
1 1/2 shots creme de cacao
1/2 shot vodka
2 1/2 shots half-and-half

Mix all ingredients in a shaker with ice, shake and pour into a chilled cocktail glass.










Kahlua Hot Chocolate recipe
   
Scale ingredients to  servings
1 oz coffee liqueur
5 ozhot cocoa
1 tbsp whipped cream
1 tsp sugar


Combine coffee liqueur and cocoa in an irish coffee cup, and sweeten to taste. Top with cream, sprinkle with grated chocolate, and serve.

TEQUILA! (PART III)

Mexican Martini:

2 oz. silver Tequila
1 ½ oz.  orange liqueur
2 oz. sweet and sour mix
1 oz. lime juice
2 oz. orange juice
Splash of lemon-lime juice
2 olives

Pour all ingredients into a large cocktail shaker filled with ice. Shake and strain into a large martini glass with a salt rim. Add two olives on a spear and serve.

TEQUILA!! (PART II)


Mexican Leprechaun

2 oz.  Blanco Tequila
½ oz. Rose’s Lime Juice
Ginger Ale
1 Lemon Wedge

Pour Cabo Wabo Tequila and lime juice into a mixing glass half filled with ice. Stir well and strain into a chilled martini glass. Top with ginger ale and garnish with a lemon wedge.

Vodkatini:

1 1/2 oz Vodka
1/2 oz Dry Vermouth
1 Green olive

How to make a Vodkatini:

Mix all ingredients for a Vodkatini Recipe in a chilled cocktail shaker and pour into cocktail drinking glasses. Add an olive, onion, lemon twist or maraschino cherry  to create a great speciality drink from an easy to make recipe!


Fizzy Banger Shot:


Put the shot glass on the bar, fill it half way with your choice of vodka.  Top w/lemon lime soda leaving a little room at the top. Cover the glass with a cocktail napkin. Now place the palm of one hand over the napkin and hold the shot glass with the other hand. Lift your hands together and then bang the shot glass three times quickly on the bar in the course of about a second and a half.   Shoot it down while the bubbles are going strong.

Bourbon Drinks Pt III

Bourbon Cobbler

1 1/2 tsp superfine sugar
3 oz club soda
1 maraschino cherry
1 slice orange
1 slice lemon
2 1/2 oz blended bourbon whiskey

In an old-fashioned glass, dissolve the sugar in the club soda. Add crushed ice until the glass is almost full. Add the bourbon and stir well. Garnish with the cherry, orange and lemon slices.








J. R.'s Revenge

3 oz bourbon whiskey
1/2 oz Southern Comfort® peach liqueur
2 dashes bitters

In a mixing glass half-filled with ice cubes, combine all of the ingredients. Stir well. Strain into a cocktail glass.
